Soapy Carrots

I’ve long thought that some raw baby carrots have a bitter, soapy taste. It turns out I’m not entirely insane. Terpenoids are the natural organic compounds that are responsible for the flavor, they’re present in much higher levels in unripened, raw carrots, and cooking diminishes the flavor. Odd, but safe.
